Among the most famous brands is Fuling Zhacai — from Fuling in Chongqing, a district known as the birthplace of Zhacai. Hundreds of millions of people have tasted Fuling Zhacai, but they may have no idea of its origin. In 1898, Qiu Shou’an, a merchant in Fuling, first made the pickle by salting, pressing and drying green mustard stems then rubbing them with the resulting unique spice mixture. Qiu’s product, which he named Zhacai — literally pressed vegetable — won instant success in the market because it was tender, crisp, tasty and appetizing. The unique flavor and quality has been carried down for more than a century. Today it is not only a favorite relish in Fuling, but also popular across China and internationally. Fuling Zhacai and Fuling mustard are registered geographic marks applied by the Fuling District Zhacai Administrative Office of Chongqing, which has striven to promote the development of the product and make Fuling Zhacai a popular brand with world fame. Chongqing Fuling Establishment of a large-scale mustard production A large mustard cultivation center has been established in Fuling with 600,000 farmers at 22 townships. One of the largest of its kind in China, it now covers 620,000 acres and produces 1.3 million tons of mustard stems annually. Standing out among peers There are dozens of Zhacai producers in Fuling, with 17 recognized as leading enterprises at the district or municipal level and one as a “Leading Agricultural Enterprise” at the state level. Besides famous brands in Chongqing like Yalong and Chuanling there are nationally famous brands as Fuling Zhacai, Wujiang and Lameizi, which along with the other 35 brands in Fuling, have attained state-level green food certification. High quality, integrity and improving management are the keys to the success of the enterprises. Mutual benefit with the community With high quality and growing fame, Fuling Zhacai is sold all over China and exported to countries in Southeast Asia, Europe and North America. The success of Zhacai enterprises brings obvious economic benefits to farmers that provide raw materials as their annual income greatly increases through planting mustard. Environmental protection is another concern of the Zhacai production enterprises. The full and comprehensive usage of mustard waste makes these enterprises more environmentally friendly and also brings them fine economic rewards. Chongqing Fuling Fuling Zhacai is proud of its fame and the awards it has received at home and abroad. In 2008, the traditional production techniques of Fuling Zhacai were recognized as China’s intangible cultural heritage. This year, the brand Fuling Zhacai was identified as a famous brand by the Trademark Office of the State Administration for Industry and Commerce.

Half the Sky’s 4th Children’s Centre opened in 2002 serving the Chongqing Children's Welfare Institution with an Infant Nurture Programme and a Little Sisters Preschool Programme. A Youth Services Programme was added in 2005 and a Family Village Programme was added in 2007. It serves as a provincial Model Children’s Centre. Chongqing is located where the Yangzi and Jialingjiang rivers meet, and is the major port of the upper Yangzte River. It is one of the four “furnace cities” of China, with scorching hot and humid summers where temperatures can exceed 104 degrees Fahrenheit. The city also stands out because of the absence of bicycles; its steep hills make for coronary-inducing treks for any potential riders. Perhaps that is why Chongqing is the largest producer of motorbikes in China. Even so, Chongqing is quieter than other large Chinese cities. Since 1997, it has banned the use of car horns to reduce noise pollution on the congested peninsula. It is also a major centre for iron and steel production, shipbuilding, as well as chemical and pharmaceutical production. Chongqing was given its name, which means “Double Celebration,” by the Southern Song Emperor Guangzong in 1189, to commemorate his ascent to princely and then imperial rank. At the end of the Song period, from 1242 to 1278, Song forces held off Mongol invaders in the longest continuous military campaign ever on Chinese soil, lasting some 36 years at nearby Hechuan, 60 km to the north of the city. Chongqing’s Bayi Road in the Yuzhong District has become a street of restaurants where you can sample the strong-flavoured, heavily spiced local specialties. Chongqing has laid claim to the invention of the hot pot, a spicy treat featuring platters of meat and vegetables dipped in a vat of boiling oil mixed with garlic, chili and mind-numbing Sichuan peppers. In addition to Chongqing’s signature hot pot dish, other favourites include: red pepper chicken, quanshui chicken, tender bean-curd fish, hot pepper fish, dandan noodles, and the laozao rice wine that often go with sweet dumplings. Less spicy dishes from other counties that are now part of Chongqing include Hechuan sliced rice cake with nut meat, Jiangjin crisp sweet rice cake, and Fuling mustard tubers.
